Hot crab filo parcels

These triangular parcels of crisp, light filo pastry enclose a spicy-flavoured filling of crab and horseradish. You could also try a filling of crab, ginger, water chestnuts and sweetcorn. They look and taste wonderful and are really easy to make. Prepare them ahead for a party then bake just before serving with a sweet chilli dipping sauce.

Pan-fried scallops with chilli, ginger & orange

Make sure to thoroughly pat the scallops dry with paper kitchen towel to absorb all the liquid before searing. Understanding how quickly scallops cook means you’ll never be intimidated again. They only take a few minutes to cook, that’s it!  Heat an oiled skillet or pan until its sizzling. You want them to sizzle and crisp to a golden colour on the outside. The first scallop should sizzle as soon as it hits the oil. If it doesn’t, wait and let the pan continue heating before adding any more.

King prawn & cucumber poke bowl

A poke bowl is a traditional Hawaiian dish, based upon raw marinated fish, typically Ahi or Yellowfin tuna, that is cubed and layered up with a satisfying serving of sticky rice and power-packed pickles.
